Sunday's Crock Pot Cooking
Easy Cheesy Lasagna
1 box ziti (or any kind of noodles)
2 jars pasta sauce (I like to use my own but didn't this time)
1 can diced tomatoes
3 eggs
1lb ground beef
1lb sausage
2 tablespoons olive oil
2 cups parmesan cheese
1 large bag of mozzarella
1 cup italian bread crumbs
20 oz ricotta cheese
2 teaspoons parsley flakes
dash of salt & pepper (optional)
Grease your crock pot with non-stick cooking spray. Cook ziti according to package, drain, brown the meat and sausage and drain.
After pasta {I do mine a bit al denta} is cooked toss with olive oil and then the add pasta sauce and can of diced tomatoes.
In a separate bowl stir together 1 egg, breadcrumbs, 1 cup parmesan cheese, and 1/2 bag of mozzarella cheese, then add the meat and pasta to that.
In another bowl beat together 2 eggs, ricotta cheese, 1 cup parmesan cheese, parsley flakes and salt and pepper.
Pour half of the mixture {cheeses, meat, pasta} into the crock pot and than layer the entire ricotta mixture over that, then pour remaining pasta on top.
Cover with the other 1/2 bag of the mozzarella cheese cover and bake on low for 4 hours.
This makes A LOT! I have a 5 quart crock pot and it filled it to the top. So if you are not having people over or do not have a large family you might want to the recipe cut it in half.
I made a Cesar salad and Cheesy Ciabatta bread.....what a wonderful dinner!


You WOULD give me this recipe NOWWWWWWWWWWWWW - I JUST finished home-making a thing of lasagna for my son for his 16th birthday dinner tonight! HA! And ironically, enuf, I was thinking the whole time that I wish there was a recipe for crockpot lasagna! HA! Thanks for sharing - I am adding this to my favorite recipes! :O)
